....tis the season for cozy pj's, slow start mornings and PANCAKES!!
This festive twist on pancakes is one of my favorites; they smell delicious while cooking (sure to wake those who haven't risen yet with mouth watering delight!) and taste even better!
I love this recipe because it's super simple and perfect for getting your family around the dining room table. Or, in my case to make and take back to bed to eat while I watch movies in my onesie holiday pajamas!
- 2 cups all purpose flour
- 1 tbsp baking pwder
- 1 pinch of salt
- 1/4 tsp of nutmeg
- 2 large eggs lightly beaten
- 1/4 vegetable oil
- 2 cups egg nog
- warm maple syrup
Combine all dry ingredients, sift.
Mix the eggs, oil and eggnog together in a separate bowl. Add to dry ingredient mixture. Stir until slightly lumpy.
Heat griddle or large skillet on medium heat and spray with nonstick cooking spray. For each pancake us use about 1/4 of batter, but adjust to whatever size pancake you like (miniature ones fun for kids and are great for making single serve pancake towers for parties/ catering!)
Pancake is ready to flip when it becomes bubbly; flip and let the other side cook (about 1 min).
Serve warm, topped with warm maple syrup with your other favorite breakfast indulgences.
